In the world of Japanese sake, “hiya” doesn’t just mean “cold.”
Traditionally, “hiya” refers to sake served at room temperature (about 15–25°C / 59–77°F).
However, nowadays many people use “hiya” to mean cold sake from the fridge, which is technically called “reishu.”
Term | Temp. Range | Meaning | Recommended Sake |
---|---|---|---|
Reishu | 5–10°C | Chilled in the fridge | Ginjo / Daiginjo sake |
Hiya | 15–25°C | Room temperature | Junmai sake |
Lightly chilled | 10–15°C | Slightly cool, not too cold | Fruity or aromatic sake |
Why drink chilled sake?
- Enhances fruity aromas
- Easy to drink, smooth for beginners
- Balanced sweet & sour taste
Tips:
- Chill in the fridge for 1–2 hours
- Use a rock glass or wine glass
- Don’t overchill—too cold can mute the aroma
